Crunchy red pesto topped cod

Ingredients to serve 2 people

  • Baby new potatoes
  • olive oil
  • 25g breadcrumbs (you can make your own but I used prepared ones)
  • 2 teaspoons of butter or spread
  • 1 small spring onion finely sliced or chopped
  • 2 x 150g cod fillets or cod loin.  I prefer cod loin but cod fillets are less likely to fall apart
  • 2 x tablespoons of sun dried tomato pesto
  • steamed green beans to serve


  1. Boil or steam the new potatoes
  2. Heat the grill to medium.  Mix the breadcrumbs with the melted butter or spread, spring onion and some cracked black pepper
  3. Place the cod on some foil or baking paper on a tray and pop under the grill for 5-6 minutes or until the flesh is opaque
  4. Carefully turn them over and spread each with 1 tablespoon of pesto and sprinkle the breadcrumbs over
  5. Return to the grill for a further 4-5 minutes or until the topping is golden and the fish is cooked through
  6. Serve with new potatoes and steamed green beans.  A spoon of mayo or tartar sauce is a nice accompaniment
